The most used aroma in the world
Vanilla aroma is highly sought after worldwide, yet a mere 3% originates directly from vanilla beans.
The remaining 97% is derived through chemical synthesis, known as vanillin, using phenol or wood pulp residues with lignin. Another source is the transformation of natural molecules into vanillin, referred to as "natural aroma," commonly obtained from ferulic acid in rice or cloves.
